Slow Cooker Spicy Chicken Soup
Some form of chicken soup is my left over heaven. From being a nipper my dad used to do the roast chicken on a Sunday, my mum made a pie with the scraps of meat left on a Monday and the rest was chucked in a pan with lots of chopped veg and seasoning and pulses. So chicken soup in all its forms is hugely comforting to me.
I love a bit of spice too and if the whole thing can be thrown into the stockpot from start to finish with no tending then all the better for the days when I’m up to my eyes in creative stuff.
I would be using leftover chicken or fresh thighs rather than chicken breasts but find the recipe for this on Slow Cooker Gourmet
