Comfort food – the bacon butty
Nothing says British breakfast more than a bacon butty, unless it’s a Full Monty but we don’t always have time or the inclination for such a belly buster. I do confess though I am fond of a twist to my bacon butty. My favourite is to add a little sharpness with cheese and a little sweetness with either maple or honey. I will take a nice tangy goats cheese and grill it when the bacon is cooked and just crispy, I’ll pop them on a pan de leche or brioche, lightly toasted, with a bit of rocket and a drizzle of maple syrup. Heaven on a plate.
